I now make lasagna without the pasta. So easy. Put homemade or frozen meatballs in the bottom of a bowl. I recommend a deepish bowl with straight sides. Scoop 2 heaping tablespoons of ricotta cheese over the meatballs. Next layer on your favorite pasta sauce or diced/stewed tomatoes. Finish with a nice helping of grated Italian-blend cheese & microwave on High for 6-8 minutes [depending on wattage]. Pasta-less lasagna.

Easy taco/chili base- 1 tsp each (per pound of meat):
Cumin
Salt
Chili, Onion and Garlic powders
Paprika

For tacos, add one extra teaspoon of cumin or for chili, add one extra teaspoon of chili powder. And if you get heartburn, I'd leave out the paprika.

Redmond’s Real Salt makes a fantastic taco seasoning without the fillers. They also have a Chili Lime seasoning which is perfect with the taco seasoning. Thank you for the great quick yummy ideas and recipes!

Frittata with lots of sausage, cheese, and whatever veg is left in the frig (cooked broccoli or zucchini is a fav). The custard portion is eggs, cream, and a little water.

I love sausage and peppers or sausage and sauerkraut.
I know to be careful of the sausage for hidden sugars and fillers. I have learned to read the labels.

Try a soup supper. A tofu egg-drop soup with mushroom and spinach is great. Use boxed low salt chicken broth upped with a Tsp of chopped garlic and 1/2 tsp of crushed ginger. Additional low carb veg can also be added along with left over BBQ chicken or mini meat balls (cooked and browned in advance). The latter could replace the tofu for variety.

Definitely a taco salad...But I've grown to appreciate chicken broccoli alfredo bake without the pasta.

You mentioned the cornstarch in the taco seasoning but nothing about the maltodextrin. Can you please do a video on the dangers of maltodextrin.

I've tried pork rinds as bread crumbs in the past but they seemed oily. I never thought of adding the parmesan cheese. Thank you for your videos 🌺
