PUMPKIN MAC AND CHEESE

Macros (1 serving): 320 cals, 21P, 40.5C, 10F

Ingredients (makes 4 servings):
-227g (1 box) Banza elbow shaped chickpea pasta (or alternative)
-15g light margarine
-8g cornstarch
-1 tsp yellow mustard
-1 tsp minced garlic
-salt, to taste
-180ml unsweetened almond milk
-125g pumpkin puree
-120g grated light cheddar

TOMATO SOUP

Macros (entire soup):
258 cals, 21.5P, 37.5C, 3F

Ingredients:
-85g finely chopped onion
-2 tsp minced garlic - finely chopped
-½ can whole peeled tomatoes
-330ml vegetable broth
-pinch salt
-5g cornstarch
-8g finely chopped basil
-15g tomato paste
-110g 1% cottage cheese
-5g grated parmesan
-Crusty bread slice

VEGETARIAN CHILI

Macros (1 serving): 369 cals, 29.5P, 37C, 14F
-340g beyond meat meatless crumbles
-85g onion, chopped
-2 tsp minced garlic
-100g chopped bell pepper
-1/2 can no salt added crushed tomatoes (do not drain)
-1/2 can kidney beans, drained and rinsed
-1/2 can black beans, drained and rinsed
-120ml water
-pinch of salt
-5g monkfruit sweetener
-60g light shredded cheese
-chopped green onion
-top with salsa & tortilla strips (optional)
