I have been trying to eat atleast 100 grams of protein per day (1 g/1 lb lean muscle) especially since I just started going back to the gym after a 6-week break.

So for breakfast, I had 3 eggs (6 grams protein each) which are so easy and filling. Then I made a kefir smoothie as an easy way to get probiotics, fruit and a veggie in. Kefir is so so good for your gut so get on this if you have not tried it yet!
I added 1 cup kefir, a scoop of collagen powder, frozen wild blueberries and a cucumber. If you like a sweeter smoothie make sure to add a banana or a couple dates.

Lunch was Teriyaki chicken (grilled chicken breast + ready-made teriyaki sauce), and cooked frozen veggies - here I used Brussels sprouts + hearts of palm

Snack was my 1 cup cottage cheese + honey + pumpkin seeds + diced apple + cinnamon. The best combo ever!

Dinner was pumpkin protein pasta. Here is the recipe:
16 ounces pasta
2 tablespoons olive oil
1/2 cup onion
1 tablespoon fresh garlic, finely minced
1 cup pumpkin puree
1 cup cottage cheese
1/2 cup freshly grated parmesan (optional)
1/4 teaspoon nutmeg
1 teaspoon red pepper flakes or to taste
1 teaspoon paprika
salt to taste
black pepper to taste
1 cup reserved pasta water

INSTRUCTIONS
1. Bring a large pot of salted water to a boil. Cook pasta according to package directions. Reserve 1 cup of pasta water and then drain.
2. Heat olive oil in a large skillet over medium heat. Add onion until transparent and soft. Add garlic and cook until aromatic, 1 minute. 
3. Add the pumpkin puree and mix together. Cook down the pumpkin puree for 2 to 3 minutes.
4. Add the reserved pasta water and mix until incorporated. Simmer for about 2 to 3 minutes.
5. Add in the cottage cheese and spices.
6. Blend all together until creamy.
7. Toss in the cooked pasta and mix to coat evenly.
8. Serve with parmesan on top (optional).

Where do you get the chicken from? Costco? Would like to make this

We cant afford chicken more then once a  week! And when we do we all get maybe 100g per week as a family of 4....
Can you still eat healthy even without those fancy things like collagen powder and lots of meat?
