Back in the day when I pinched pennies 'til they squealed, I kept a tall, square Tupperware container in the freezer. EVERY left over scrap, a piece of pork chop, a spoonful of rice (we ate a lot of rice), sauce of any kind, chicken, taco shell, Whatever went into the Tupperware container. And when the container got full, I accessed the contents, added some protein and made a big pot of "stew". If there wasn't enough for a meal for the two of us, I cooked up some rice and we'd eat the stew over rice.
And whatever was left either that day or the next became the start of a shiny clean Tupperware container in the freezer. Aww, the good old days.

Leftovers. I was a foster mom. There was a time in my life when I was feeding my 300-pound ex-middle-linebacker husband and 5 teenagers. For those who are unaware this is the equivalent of feeding twelve normal adults. Leftovers? What is this odd phenomenon? I do not recall any leftovers. Now that the kids are all grown and gone and I'm a widow, I size my meals appropriately and usually don't end up with that many leftovers. Don't forget about stuffing a potato with leftovers, however. It works out great for the 'dab of this' and 'bite of that' type leftovers that I typically have now. Love your content, Kate. Keep up the good work.

I once asked my mom for a favorite casserole recipe that she would make, she laughed and said she made it with whatever was leftover in the refrigerator. She would mix up all leftovers add a can of corn, some corn chips and top it with cheese then heat in oven. It was the Best.

Kate, an air fryer is SO much better for leftovers. I used a stove top to heat leftovers in the 70’s. Most people do not want to make dirty dishes to heat up left overs either. Air Fryers are perfect for pizza, veggies etc.

This is video is perfect timing! Fridays are leftovers night! My fridge is full of delicious remnants of meals! As a matter of fact, we probably can have leftovers tonight and tomorrow for lunch!!

Leftovers! Heck yes to the omelette and quesadilla tips, it's so fun to combine different flavors. We always cook up extra meat for other meals. It only makes a mess once, and buying larger quantities is usually less expensive per pound.

Back in the day when I was making serious decisions about what volume or quantity was a left over and what was food scrap to be tossed - I started paying a lot of attention to how many and how finely diced the goodies were in commercial soups. Then i paid attention to what came in salad kits, meals and bowls from the grocery store frozen section, and even how much of what was in restaurant meals. This re-shaped my view of even those left over corn kernals from can or frozen in the small quantities between a teaspoon and a Tablespoon. Heavens, just a rounded teaspoon of corn kernels and less than a Tablespoon of chicken shreds picked from the bone can turn a can of inexpensive chicken noodle soup into a more expensive chunky chicken noodle soup.

Hi Kate. Thought of you and family last night as we watched the devastating and tragic news from Maine. I use all of our leftovers and apply many of your techniques. My favorite tip is label everything. I keep a roll of washi tape and a marker in kitchen drawer and always put a "use by" date and description of the contents. This really helps us avoid opening containers to find petrified, slimy, or penicillin-food! I even label containers when I deem that the content will go to chickens or the dog.

They used to do this at my kids school. - they called it come and dine day. It was all kinds of freezer clean out. They loved it.

I used to do "Mish-Mash" night. It was basically a buffet of leftovers, the kids loved it!! And after I made a beef stew I would put the leftovers in a pie shell and it would become beef pot pie!!

I buy a whole baked chicken.
Cut off dark meat-2 meals
Cut off and chop or shred white meat, use for chicken salad, stir fry, burrito filling- 4-6 meals
Push chicken carcass down so some of the bones crack and they fit into a stock pot, add water, spices and bring to boil. Then simmer for 1-2 hours. Strain liquid into one or two containers and freeze. Use for soup stock.
You have used the whole chicken and have multiple meals

Kate - thank you for this leftover video. Bonus tip- use your freezer to “hold or freeze” some of your leftovers to add to stuff later… it’s just my hubby and I, so I know with two people having that freezer tool really extends the life of all food for no waste. You can pull it out in 2 weeks on a crazy night. I also have a calendar and throw some goal meals and highlight as I use them. These tools plus reverse meal planning had cut my grocery bill in half. I tried your beef crockpot recipe - it was so good.

For an assortment of reasons, I drifted into clear glass food storage containers; I did over the space of a couple of years as opposed to a single trip to the store. As an unplanned added benefit I find that the clear storage containers have resulted in less fuzz, fewer science experiments, and less food waste. Should this occur, a kiss of bleach or other cleaner plus a little soaking cleans up glass and also makes the food container safe for use again.
