I just finished making your kimchi recipe. GREAT instructions, easy to follow. Made two substitutions, maple syrup for the plum syrup and store-bought vegan fish sauce. Next time I make it hopefully I'll have the plum syrup and ill also make your vegan fish sauce. It still came out delicious!! I can't wait until it's fermented the 4 days. I have made several different kimchi recipes. Yours hands down is the best!! Thank You!!

Joanne, thank you for sharing your culture with us. I think food is a love language for so many of us so learning about other people's food cultures is so intimate in my opinion. Im gonna try this but im gonna use Savoy cabbage instead of napa, it's got that iconic wrinkly texture but i can buy it locally grown instead of having napa shipped halfway across the planet.

NOMS. I made a version similar to this but found some Vegan Fishy sauce. I'm gonna make yours. The Ingredients look amazing. I was making a lot of kimchi in 2023 as I was selling it at the Local Farmers marker in Athens, Texas. It was sold out every time. Wasn't able to keep it on the shelves. Love making this. Thank you for your edition of it!

I love my Plum Syrup, if you don't have it GET IT. It's a great investment. I use it for my Kimchi as well as Bulgogi marinade and a simple add it to hot water for a tea. Thank you for this recipe, I love trying all the different ways to make Kimchi <3

I’m not a fan of regular sour cabbage kimchi, but I’ll try your vegan version to see if it hits the spot for me. Fresh cucumber kimchi, daikon kimchi, and green onion kimchi totally opened the world of lightly fermented versions to me, and I really love making and eating them. I hope your recipe does the same for me.
