I'm Korean, living in Korea, and want to say please don't store kimchi in a glass jar... It will EXPLODE. Kimchi is food which can ferment, and it will make kimchi's flavor more delicious. But it will also make gas and easily explode the glass jar. At least don't squeeze it down to bottle it. Leave some space to ferment🥺 I believe you guys will do good, but i'm just worry of the viewers who will try some.

+ I didn't know there would be lots of comments and likes😅 In Korea, we put kimchi in an airtight rubber container (We have the product name of 'kimchi container') and store in a fridge. Koreans usually make kimchi with a big batch, so we like to store it in smaller portions to make it easier to eat casually.

I've heard there's hundreds of iterations of kimchi, the most most common ones I've observed in social media are made with cabbage and cucumber but there's some interesting ones such as dandelion kimchi. It honestly wouldn't surprise me if somebody's grandmother traditionally made it without using any fish or seashell products, after all, the magic of kimchi is that everyone makes it the way they like it. It's a new experience wherever you look!

Store it in ceramic containers that doesn't put much pressure. In India we made pickles since generations. Always used large and medium ceramic storages and use cloth to tie over it and then cover. In a week time, we open and let out air. Its best to avoid any excess pressure building up

I’ve tried both vegan and non vegan kimchi- they tastes pretty much identical
I will say that the umami is different in each- one has more of the fish umami and the other as usually mushroom
BUT both are equally delicious!
