I've been making it similarly for years. You'll want to rinse and drain the cabbage a couple of times after draining the brine, or it will be too salty. Traditional recipe has daikon radish and green onion (scallions), and often shredded carrot and a couple teaspoons of sugar.

Cut cabbages into quarters with the root stem keeping the leaves in place. Wash then dry brine with salt, making sure to go in between each leaf. Rinse off excess salt from dry brining after 30 minutes to an hour. Everything else was good.

Feed your chickens any hot peppers you have in your garden. They will eat them up no matter how hot they are and your eggs will have this background taste of the peppers. My chickens go crazy over the peppers

I flinched so hard my Korean grandmother felt it when he dove in to mix with bare hands. Not saying it's wrong or anything, but it did make me clutch my pearls. Defo need some shrimp paste in there imo, but this isn't bad and easier than traditional methods!
