Recipe

Easiest Kimchi

Ingredients:

• Napa cabbage (1 kg)
• Chives (100 g)
• Carrot (150 g)
• Coarse salt (2 T)

Blending Ingredients:

• Onion (¼)
• Pear (¼)
• Apple (¼)
• Garlic (4 cloves)
• Ginger (1 piece)
• Water (½ cup)
*Kombu/Kelp infused warer will be way better

Seasoning Ingredients:

• Red pepper powder (1 cup)
• Soy sauce (1 T)

Rice Flour Paste:

• Flour (1 T)
• Water (1 cup)

Instructions:

1. Cut the cabbage into quarters, wash well, and chop into bite-sized pieces.
2. Sprinkle cabbage with 2 T of salt and let sit for 20 minutes to soften.
3. In a pot, mix rice flour and water; heat on low until thickened, then let cool.
4. Chop the apple, pear, and onion, then blend with garlic, ginger, and water until smooth.
5. In a bowl, mix the rice paste, seasoning ingredients, and blended mixture to make the kimchi seasoning.
6. Add cabbage and chives, mix well, and adjust salt if needed.
7. Pack into a clean container, ferment at room temperature for 2 days, then refrigerate.

In India kimchi is like a achaar(pickle) but it could be made with different vegetables products like ginger, garlic, green chilli, lotus stem, raddish, carrot, mango, lemon but cabbage is not used. Its proccess is same but we got variety. I would like try what cabbage achaar looks like 😊

i dont live in korea but i still buying those fish sauce, anchovy sauce, salty shrimps and all korean spicy chili flakes and chili paste lol. i am living in los angeles and i l love korean food so much, i have been cooking korean bbq with all the sauce and seasoning from scratch..love kimchi too

Love this! I love kimchi 🥰 but I crave different levels of it often. Fresh, slightly fermented, heavily fermented. Each taste goes well with different flavors (that all go well with sour cream and noodles though!) I’ve made simple versions like this, this fall I want to make and ferment it traditionally to gift my family ❤

I didn’t have fish sauce so I used oyster sauce. Still turned out wonderful. Ate some every day last week. I’m hooked😊😊❤👏🏿👏🏿

I love this recipe. I have been making it with apples for years. I also make it grain free. It works well with or without rice soup.
