This past week for 4 of the days I had roasted acorn squash and beets. I love a big ol’ plate of yummy roasted veggies. Nothing on them, doesn’t need it. 😋

Not just lunch this week, it's something that I usually have when I'm busy. I prep a lot of baked potatoes, then I cut them into cubes and warm them in oven. Then I make salad with any kind of salad mix /greens( huge bowl😅), cherry tomatoes, cucumbers, shreded carrots, basically any veggies that I want and add warm baked potatoes and dressing. Usually goddess dressing or hummus dressing ( hummus, lemon juice and water ) . It's so jummy 😊

I love the idea of using-up-condiment videos! We always have "condiment creep". We use them up, then they collect again. I need to focus on using and control my buying. And I do often plan meals on using them up.

Lunch is chicken salad homemade and put back some to make chicken spaghetti. Then I take the chicken bones and make chicken broth to use In other meals. The neck and wings is meals for my little do... One chicken is lots of meals for two people

I made the TikTok feta pasta but I added lots of roasted veggies. It was so good!! And it made a large casserole dish full! I call it Greek Veggie Feta Pasta. I seasoned the veggies with Greek seasonings.
I eat gluten free, because I’m allergic to wheat. So, I used the Aldi gluten free pasta that’s made with quinoa & brown rice. They hold together much better.

Oh, yes, yes to to the use it up video. The egg rolls look amazing and a lot easier than the spring rolls I’ve been doing. I understand about the bulk section in stores, it bothers me. Have wonderful week. 😊

we had steamed mussels with onion, celery and garlic, and a size of home made bread stuffed with feta, roasted red peppers, garlic and oregano. It was delicious.

Lunch for this week is the same tofu you used in this video (I do freeze, defrost, press and then break chunks off, instead of chopping, to sauté with olive oil because I like the texture better that way!), in a sesame teriyaki sauce. Paired that with white rice and peas with some extra sauce on top! I used about a half a block because I only made 3 days of that lunch.
Also been loving cherry tomato, mini cucumber, green onion and avocado 'salad'. I diced them, then add some oil olive, red wine vinegar, salt and garlic powder for the 'dressing'. Been loving this - feels refreshing as we are in spring in New England.

A good dressing for salads I use is equal parts honey, ground mustard, and red vinegar, add black pepper and onion powder and shake in a jar. Put dressing in the container first with salad of choice on top. Mix only when you are ready to eat
