I was really confused with this one. After much thinking, only Hummus clicked to me. The only problem I had was with the texture, but that was the trade off that I had to make.
I decided to counter that with Tuile and the Tart Shell.

A tip remove the skin of chickpeas by submerging them in cold water . Ut will make it even smoother

i have a question, i genuinely mean no hate but if you take away the classic chole gravy to make it hummus, how is it even considered chole bhature anymore, it's just hummus? it's not even the same dish? if I take naan dough and use it to make a pizza base it won't be called a naan anymore?
i could be wrong but I am curious to understand your reasoning

You over toasted the sesame seeds. It should be slightly brown or creamish in color, yours are dark brown. Might give extra nutty flavor or even bitter sometimes.
