I've made this recipe twice. Once with boiling the 7 cloves garlic, and next time without. Overall, I DON'T recommend boiling the garlic. Instead reduce the cloves to 3-4, cut them in half, discard the inner stem/shoot, mince it, and add it to the blender with the cooked chickpeas etc. The raw garlic has soooo much amazing flavor that is almost completely lost if you boil it.

As a Jew, I’m proud that someone like Alon is enchanted by Arab- Levantine gastronomy, because everything that was on that table is representative of Arab or Palestinian food, not Israeli. On a second note, his hummus wouldn’t pass the test in a country like Lebanon where they master this type of cooking.. I got the chance to go study at the American U.of Beirut, a city that beats any place I’ve been to when it comes to eating and outing.. Lebanon and its people are most amazing and generous. We ought to work toward bringing our people closer starting by acknowledging ‘the other’.. we have so much in common. I love Arabs and their culture.

1-Israel doesn’t exist that’s *Palestine 🇵🇸*
2-Hummus doesn’t even contain baking soda
3-This isn’t the classic hummus because people in the 80s didn’t have baking soda and yet they still made the dish
4-Garlic is optional
5-that’s Lebanese/Arabian bread

I wouldn’t call it a classic hummus, but I would say it’s a fully loaded version. Every middle eastern culture has its own variation whether it’s the Palestinians, Syrians, Lebanese, Israelis, Egyptians and everyone else in the Middle East. Actually every household does it differently. The base ingredients for hummus bi tahini is chick peas, tahini, garlic, and lemon juice. Everything else is optional for taste. Some people like a grittier texture, some people like it creamy, some people like to add cumin, some people like to blend in olive oil instead of putting it on top. Some people find the garlic to strong

Why is it that when we speak of hummus Israel is mentioned? Hummus is an arabic dish (a staple dish in Lebanon). Hummus in arabic means chickpeas; Israel has no claim whatsoever on this arabic dish...

Guys, it’s okay to make YOUR version of ANY recipe no matter the place of origin. Being different on all levels, in every way no matter who, what, when, where or why is what makes the world go round. Who would have thought that hummus would create such division??....it’s just hummus. It’s really just hummus...
