Homemade Hummus

Ingredients:

30 oz Cooked Chick Peas
2-3 Garlic Cloves
2 Lemons
1/2 Cup Tahini
1/4 Cup Olive Oil
1 tsp Cumin
2-3 Tbsp Ice Water
Parsley (garnish)
Paprika (garnish)
Salt and Pepper

Instructions:

Rinse the chick peas and remove the skins.

In a food processor add the chick peas, garlic, tahini, olive oil, cumin, the juice of 1.5 lemons, a splash of ice water, salt and pepper. Purée until smooth adding a little more ice water if needed. Taste and adjust the seasoning to your liking.

Garnish with olive oil, paprika, and freshly chopped parsley. Serve with fresh veggies, crackers, or pita bread.

If you want smooth hummus, the trick is not about removing the skin, you need to mix the chickpeas well add water until it’s very smooth then add tahini. Never add tahini at the beginning with the chickpeas. I learned this from a Lebanese cook.

For anyone that wants to make this you don't have to remove the skins of the chic peas but it will make it smoother. If I'm making for my self i usually don't bother but if I'm making it for someone else and really want to show off I'll remove the skins.

Boil chickpeas with baking powder it will automatically remove the shell

tip from Turkey, serve with a nice amount of ghee oil and roasted pine kernel highly recommended for a much much better taste

looking at how mom makes it (im palestinian) she really doesn’t add this much garlic or cumin or pepper or ice water (unless its a bit too thick) 😅 we just put the cumin on top of the hummus after its served on a plate with olive oil but yours still looks amazing so good job

I found the best way to remove the skins from the chickpeas! Take a wooden spoon, and when they were cooking and finished, stir the beans to break the skin, then gently stir the beans against the pot. By pressing the beans against the side of the pot, it helps release the skin use a wooden spoon because of how the wood grain grabs the skin. Then add some more water. Stir some more gently the skins will float to the top of the water. Next use a ladle to lift the skins out of the water. Drain and continue making the hummus. ❤
