الافضل ان تغسل الحمص ثم تنقعه وتغليه بنفس الماء وذالك للمحافظه على محتوياته وأيضًا هكذا يصبح بعد الغلي "جِلي" وهو ما يعطي الحمص قوام بعد تحضيره. الافضل ان تضع الحمص في الثلاجه ليبرد جيدًا قبل تحضيره وممكن استعمال الثلج عند الحاجه. والأفضل ايضا وضعه بالثلاجه بعد تحضيره

Garlic inside is a must, cumin inside or topped afterwards is optional. I like putting some inside and then also on top 😂. But let me give you a small tip that I have been using for many years. Even if the way you describe it, made by soaking and cooking chickpeas is superior in taste, it is quite a hassle if you want to make large quantities of hummus or too often. I prefer using chickpea flour instead. Just mix it with cold water with a ratio of no less than 1:3, make a watery mix, then cook it until it starts bubbling and thickening. You have to stir it continuously to make sure the bottom does not burn and to make sure that it is homogeneous and you do not have lumps inside (essentially it's like cooking starch). Then let it cool and add your lemon, garlic, salt, cumin and Tahini... It's pretty quick and less cumbersome. No peeling or blending needed.

I have never added water to mine, need to try this ice method. I do add tahini that I mixed with crushed garlic and lemon to it- then if I want it thinner, add a little sour cream.
I make it look exactly as his but before adding olive oil, I sprinkle with ground paprika. Yum
