Angelo's Mom Makes Kotopita - Greek Chicken Pie w/ Mint

My mom makes kotopita, a Greek chicken pie with filo dough. You need 2 cups boiled or roasted shredded chicken, parsley, 4 bunches green onions chopped, mint, 1 cup grated cheese (parmesan, kefalograviera), 5 eggs, nutmeg, unsalted butter, filo dough, 1 cup flour, 2 cups milk, and pepper. Bake at 350 degrees for about 45 minutes.

You can make a bechamel with skim or lowfat milk. It's not as rich as 2% or whole milk (or heavy cream), but it will work and still taste delicious.
