Angelo's Mom Makes Tiropita (Greek Cheese Pie)

This is like spanakopita, but with several cheeses instead of spinach.
Ingredients
-1 cup grated kefalograviera cheese (substitute another hard cheese if you can't get this)
-1 pack of filo dough #4
-Several sticks of butter
-Half cup flour
-2 cups milk
-1 pound crumbled feta cheese
-A little nutmeg
-4 whipped eggs
-Cottage cheese that's been put in a blender
-1 bunch chopped parsley
-A large pan to go on the stove
-A small pot
-A baking pan
-A brush for butter
If you can't get kefalograviera (and it's expensive, about $14/pound), you can substitute another hard cheese for it. Keep the filo dough in the fridge until you're about to use it.
Grate a cup of kefalograviera. Put four eggs into a bowl and whip them. Put a container of cottage cheese into a blender, blend it, and put it into a bowl. Chop some parsley.
Put a large pan on the stove and bring the heat to medium low. Put a stick of butter in the pan to melt. Crumble 1 pound of feta cheese into a bowl. Clean the baking pan if necessary. When the butter is melted in the pan on the stove, put the half cup of flour into it and stir it.
Add the 2 cups of milk to the pan and stir it for 3-4 minutes or until it gets thick and creamy. Turn the flame off once it's creamy and add in all the other ingredients (except the filo dough)-1 pound crumbled feta cheese, 4 whipped eggs, cottage cheese, parsley, 1 cup grated kefalograviera cheese, sprinkle some nutmeg, and stir it thoroughly. Preheat the oven to 350 degrees.
Put two sticks of butter in a small pot and put it on the stove over heat to melt it. Get the filo dough out of the fridge and onto a cutting board. Use a brush to brush a layer of melted butter onto the baking pan. Put one layer of filo dough onto the pan, spread out, and brush it with butter. Repeat until you have ten layers of filo dough at the bottom of the pan, each coated with butter.
Pour the mix of cheese, flour, and milk from the cooking pan into the baking pan. Put another 10 layers of filo dough on top with butter on each individual layer of dough. Cut part of the way down, but not much, to make rows of the pastry. Sprinkle some water on top of the dough and and pour some remaining butter on top.
Put it in the oven and bake it for about 45 minutes at 350 degrees or until browned and crispy on top. It comes out very hot, so let it cool for about an hour before serving. Store it in the fridge and reheat it in the oven when eating again.
It's good for a potty. Don't criticize the cook.
