Angelo's Mom Makes Yiaourtopita (Greek Yogurt Dessert Pastry)
Показать описание
This is a really good cake with Greek yogurt and a sweet syrup you put on afterwards. The ingredients:
-3 sticks butter (plus a 4th for buttering the baking pan)
-3 1/2 cups flour
-1 cup ground almonds
-1 teaspoon baking powder
-1 teaspoon baking soda
-6 egg yolks
-6 egg whites with a little salt
-1 cup Greek yogurt (which is strained-don't get unstrained yogurt, it'll be water)
-1 1/2 cups sugar
Ingredients for the syrup:
-2 cups sugar
-1 1/2 cups water
-Half a lemon's juice
-Lemon peel (yellow only, don't cut it deep)
Grind up 1 cup almonds in a blender. Separate six egg yolks into one bowl and the whites of the eggs into another. Preheat the oven to 350 degrees.
Use an egg beater to thoroughly mix the three sticks of butter, sugar, and egg yolks in a large bowl. In a separate bowl, mix baking soda, flour, baking powder with a spoon.
Use the egg beater to thoroughly whip the egg whites with a little salt in a large bowl until it's thick and creamy.
Gradually add the flour/baking powder/baking soda mixture in with the butter, sugar, and egg yolks, as well as the ground almonds and Greek yogurt, stirring with a spoon.
Add the whipped egg whites to the butter/flour mixture and mix it together with a spoon.
With the fourth stick of butter, butter a baking pan and pour in the butter/flour mixture and even it out. Then put it in the oven and bake it for 45 minutes at 350 degrees. Check if it's done baking by sticking a knife in the cake and pull it out. If there's still batter sticking to the knife, it's not ready. My mom had to cook it a little longer than 45 minutes to get it cooked thoroughly, but even with a little batter on the knife it was pretty thoroughly baked.
When the yiaourtopita is almost done baking, make the syrup. Put the 2 cups sugar (I would personally cut down on that, as I'm sure it will still be sweet, but my mom likes to put a ton of sugar in) in a pot, 1 1/2 cups water, juice from half a lemon (to prevent it from caramelizing), and shallowly cut lemon peel and boil it for about ten minutes.
Take the yiaourtopita out of the oven and let it cool off for at least 10 minutes or so. Then pour the syrup on and let it absorb for an hour or so and serve. It's really good!
My mom and I also argued some, and she argued with my dad about his medication.
