Angelo's Mom Makes Kolokithopita (Greek Zucchini Pie)

Something my mom used to make that's a little like spanakopita in that it's kind of a casserole in between layers of phyllo dough, but with shredded zucchini. It came out smooth and buttery, like my mom said. Here's a similar recipe:

I love that olive oil. It's the only one I've found with harvest date and it tastes so green, fresh, lite, and doesn't ever sting your tongue.

I don't think I've ever had kolokithopita before, but can imagine how good it must be from the way she described it :P

For someone who'd like to try something from a Greek store (and who's not on a diet), I'd recommend vissino (sour cherry "spoon sweet, " that you can eat as a spoonful with a glass of water, or mix with yogurt, eat with cake, etc). I also like pasteli (honey sesame bars, sometimes with pistachios or other nuts).

That looks so delicious wish I lived nearby I would take home that entire tray. I recently ate at a Greek rest called Symposium in my neighborhood, a tradition Greek restaurant opened since 1978. I had an appetizer of fried Halloumi (cheese) it was delicious. Does your mom have any recipes for this cheese? Keep up the good work, love the cooking recipes!

Looks good :) I make this too but i add zucchini, eggs, dill, mint pepper, salt and little bit of oil and i dont cook it b4 hand.

I might actually attempt to make this. Thanks for the recipe; always looking for ways to use zucchini. The "special gunpowder" is a type of green tea.
