How to tell if your sourdough is proofed

Sourdough proofing can be tricky until you get the hang of it.
If you want to know how to tell if your sourdough is proofed you can do a simple poke test.
If you poke it and it bounces back quickly, it needs more time.
If you poke it and it leaves a dent, or your dough starts to deflate, it has over proofed.
If you poke it and it comes back nice a slowly leaving only a slight indentation, it's ready to bake.

Ah, I was wondering about the springy dough. I accidentally over bulk fermented my first batch and then this batch was very springy for a long time and I was worried about what that meant, because I didn't want to over proof. This was helpful thank you.

Not sure what these comments are getting at, I could totally see the second loaf pop back quickly! It’s a good test!

Can you put a video up from start to finish of making sd bread? I also need to know what utensils I need. I’m making it for probiotic effects.

Sorry, but your second poke on the first loaf was EXACTLY the same outcome as the poke test on the second loaf. I watched several times and they are identical in every way. This is why I don't like the finger poke test. Way too subjective and people seem to ignore the results.
