Glad you covered this, , , there has been a movement to vacuum seal meat for some years now. Which can foster some pretty nasty anaerobic bacteria. Plus the combination of vacuum sealed meat and animals raised indoors fed silage is a real concern. Silage can be a Very toxic food source ( depending on how it was created and handled ) that can infiltrate the animals blood stream and effect what bacteria the final product carries, and when vacuum sealed, as mentioned, that combination can be very unhealthy, and you'll notice by smelling the raw meat after opening. Yes, cooking can kill off much of the bacteria, but those bacteria have gone through the entire cut of meat, , as you can notice by cutting a large chunk and smelling the inside.

Sometimes ground beef will smell a little vinegary. I just cook it thoroughly and it tastes fine.

I wasted 50 bucks on some chuck sirloin or something and it caught an infection literally day off buying from the store. It was out of the fridge for like 20 minutes tops and it had such a strong cheesy smell to it. I don’t know if the cow ate something but I’ve never smelled meat so strongly before it had to have been contaminated.

It helps by knowing where your meat comes from and how it was handled. I go to a couple local processors that I would not hesitate eating roast or steaks that were no longer bright red. I would even eat browned ground beef from them as long as it passed the smell and taste test. What I won't trust is meat from any mass retailer. A lot of this stuff is handled poorly... not kept in stable and consistent ideal temperatures. It is sometimes from other countries, read your labels! I don't even trust Costco's meat the way I do my local processors. I do purchase meat at places like Walmart but I don't buy more than I can eat in 24 hours.

i made my search what does bad groud beef smel like. no one is talkng about looks and say smells bad. I don't know what bad meat smells like. what smell are we looking for. my smell isn't that great. everyone is saying if it smells bad. what does that smell like. i just opened a pacage of ground beef and i think i may smell like egg. remeinds me of egg. but like i said my nose isnt' the best. so i am searching for a smell to look for. i need help. i want to make meat loaf. so if i mix it all up and starts to smell when cooking, i have wasted my other ingredients. help

SAVE YOUR MEAT!!!
If the outside of the meat is got a little brown you sterilize the outside when it's cooked. I will cook the meat more to be safe. If it has that smell it's time to dump it. Keep meat frozen and think ahead 2 days. Pull meat out to fridge for a 2 day thaw.
Get a RF thermometer and put it in the center of the fridge. Mount the receiver on the fridge front. Try to adjust to 35 degrees. Adjust very slightly and wait a day to see the temp. Your fridge temp will vary depending on the house temp, the amount of times you open it, and if it is in defrost cycle. I keep the freezer on minimum and put ice packs in it if there are free spaces in the freezer. If power is out the ice will give the food a better chance to stay frozen. Meat is $$$$ and this will protect your investment.
Clean your fridge coils every 6 months with a vacuum. Check the outside cooling fan every year for dust and dirt and i spin the fan to see if it spins free, if not it may be time for a new one. Meat on every one and thanks Dr Baker you are the MAN!!! 😊😊😊.

I dry brine my meat in salt for at least 24 hours in the fridge all the time. I find it always cooks up better.

I'll be honest since I have been carnivore for close to two years now I can eat some fucked up meat lol. Probably just wound up fine do to having stronger PH in the stomach from the diet.
