Jamie's hair looks like he held it over a pot with steaming starchy water for too long.

Na. The starchy water is added to the pasta while you are finishing it in a pan with some sauce. You have to finish cooking the pasta in a pan with the sauce in order to get the best flavor. Adding the starchy liquid makes it creamy and delicate.

I would gently push down the Spaghetti as the lower part softens. Leaving one part up and one in the water will make it cooked uneven. And spaghetti are ready quiet fast compared to bigger kinds of pasta.

Love this guys accent! Mr. Oliver knows how to get me excited for carbs:)

I think he meant that you should take some of the starchy water that was from the pot itself, and then maybe drizzle it back into the pot so that it keeps the pasta from becoming mushy. I hope that helped explain your question. :)

Jamie, could you give Gordon a ring and explain to him about NOT adding oil to the water. Gennaro doesn't.

Its sea salt they use. Its not the same as normal salt you buy out of the supermarket.
