This is the same recipe that was in my Girl Guide Handbook, brilliant recipe. I now use Doves Farm gluten-free plain flour, 1tsp baking powder and a small tsp xanthan gum instead of (lovely normal) flour. You can also add a dessert spoon of golden caster sugar and a teaspoon of good vanilla extract. One tip from my handbook, for round Scotch pancakes tip the batter off the end of the spoon (into the pan), for oval let it run off the side of the spoon. Yummm

I know to people who are used to cooking and have the confidence these are just pancakes, but I'd love to be this quick and confident at making food in batches like this. Good video.
