You can peel the leaves and eat them, they have meat in the leaves so I usually make a vinegar and olive oil sauce and dip them in there, scraping the meat out and that's incredible!!

PLEASE READ, ARTICHOKE LOVERS & ARTICHOKE ROOKIES:

Whaaat? Throw away all the delicious leaves?? Nonono, put the whole thing in boiling water for 10 minutes, then peel off the few, tough, outer leaves. Next, prepare some of your favorite dressings and then dip the bottom part of the remaining leaves (where there is a soft, delicious and highly edible part) in the dressing. You just gotta scrape it off with your teeth :) easy peasy and it's a nice way to enjoy a starter with some people. Then, when all the leaves have been scraped clean, cut away the fibrous parts of the heart and bake it in a tray with some olive oil, salt, pepper and lemon juice and when it's gone soft, take it out and preserve it in garlic oil. THAT's the way to do it!

To people referring to the waste of meat. This is ONE way to prepare them for more complex recipes. Of course you can just boil them and dip the leaves. You can also cut the tips, empty them and fill them up with something. Lebanese/Syrians do it a lot, filled with minced meat, onion and pine nuts with rice on the side. This particular way of cutting them is more focused for recipes in which you ADD the artichokes whole, like fillings, stews, etc. Also great for roasting them.

Or you can just steam them for half an hour and then peel them and eat the meaty bits off the petals, then when you get to the inside cut out the thistly-bits before you get to the heart. This way Akex is doing it is basically just for presentation. The stems are great steamed too. Dip it in melted butter.

Hi Alex, love this one! This reminds me of Paris where I worked in a posh restaurant only cleaning artichokes for weeks. Exactly the way you show us here. Great tip not to cut the stem but break it and pull

What is the point in breaking off the stem to get the fibers out of the stem when we steps later cut the center out of the heart anyway?

I used to get these for msny years to feed to cows. I never cut one open until today when someone I help with their cows got them and I got interested. I don't claim to know anything about them but it appears to be a flower, has the bloom and a pattern (maybe Fibonacci spiral) like a sunflower. I think I did pretty good for not having watched a video first or been shown.

I've always felt like there's just too much work and waste to get one tiny little artichoke heart so I've never tried them :') Am I missing out?

Depending on age, you can actually keep quite an amount of the stem (1-3 cm). The best bit. You just trim around the tough and stringy bit. ;)
