My Go-To Vegan, Plant-Based Dinner Recipes (oil free)

Today, I'm sharing some of my favorite go-to vegan, plant based dinner recipes —delicious, free from oil, and healthy! They are also usually family favorites, but if not, these oil-free vegan, plant-based meals are great to make on the weekend so you can eat off of them the entire week. If you have a non-vegan family like me and don't want to make multiple meals throughout the week, these meals are for you!

Recipes:
Red Thai Curry:
1 onion chopped
1 bell pepper chopped
4 cloves of garlic
2 tsp minced ginger
3 TBSP red curry paste
1/2 block of tofu in cubes
1 can LIGHT coconut milk
1 cup water
4 TBSP low sodium soy sauce
2 cups of chopped broccoli
1 medium sweet potato chopped

🔥please note in the first recipe (red Thai curry), I mention adding tomato paste and I meant red curry paste. All the recipes are in the description. Sorry for that little mistake sometimes when I’m doing voiceovers I rush to keep up with the video and say the wrong thing. My bad.

When I make chili I add one can of pineapple pieces and the juice in and it’s soooo good. 😋

Carrots also add a sweetness if you dont want to use maple syrup.

Tia, your Red Beans and Rice IS MY VERY on permanent rotation at my house. And I used to make RB&R with the andouille and ham. This is far better!

Newly vegan, couple questions. 1/ how to get past the tummy issues eating so many beans. 2/ how do kids become so veggie adverse? My grands are the same and I thought maybe it’s because their parents don’t or won’t get them to try things. Our kids ate all the things so 🤷🏻‍♀️. Kinda frustrating as I see the grands only wanting pizza, chicken nuggets and fries, ugh.

I actually had chili over broccoli for lunch today. 😂. But my chili was not homemade. It was definitely just an organic canned vegan chili I think from Amy’s or something like that. I definitely need to make some homemade chili though.

I’m really trying to figure out why my stomach hurts so bad if I eat even just a little broccoli now (so painful) but as a child it was my favorite vegetable and I ate it literally almost every day
