If you like to snack, and if you like to entertain friends or family, then you're gonna love these pickled eggs and pickled Sweet and Spicy mini peppers. These two recipes are super easy to prepare, they will be the perfect snack or the star of the party when you set them out for your family or friends along with an assortment of cheeses and crackers, and they will make a great topic of conversation. I love to pickle different vegetables with different spices so they all have a different flavor too, These pickled eggs and peppers don't last long in our refrigerator, because they are just that good, I try to pickle just enough to last us about 2 to 4 weeks then I just prepare some more when theyre all gone. INGREDIENTS FOR PICKLED EGGS-------------
12 Medium or Large Eggs ( I used large)
2 Green Onions
Fresh Dill As needed
1 Medium Carrot (sliced)
1 Red Jalapeño or green (optional)
2 Quqrt Sterilized Jar with Lid

________INGREDIENTS FOR BRINE________
2 C. Water
2 C. Apple Cider Vinegar (or clear white)
1 Tbsp Sugar ( for good balance)
1 Tbsp Kosher Salt

SPICES_____________________
1/2 tsp. Mustard Seed
1/2 tsp. Red Pepper Flakes
1/2 tsp. Black Peppercorns
1 tsp Minced dried Onions
1 tsp Minced dry Garlic

SWEET AND SPICY MINI PEPPERS______
Sweet mini Peppers as needed
2 Jalapeños cut in half long way (optional)
Few Pieces of Onion as needed
Fresh Dill as needed

INGREDIENTS FOR BRINE____________
1 1/4 C. Filtered water
1 1/4 C. Apple Cider Vinegar (or clear white)
1 tsp Kosher Salt
3 Tbsp. Sugar

INGREDIENT SPICES _________________
1/2 tsp. Peppercorns
1/2 tsp. Minced dry Onions ( or fresh)
1/2 tsp. Minced dry Garlic (or fresh)
1/2 tsp. Mustard Seed
1 Bay Leaf
1 Quart Sterilized Jar with Lid

I love to pickle. Being of Eastern European decent (Lithuanian), we eat a lot of pickled foods. My fridge always has a pickled something or other in it and I'm always looking for new combinations or pickling liquid recipes. Can't wait to try these 2 recipes. Love your channel Rachel.
