How To Cook The BEST Steak In Cast Iron!

This is my quick and easy recipe on how to cook the BEST rare rump steak!

INGREDIENTS

14oz/400g rump steak
30g unsalted butter
1 tsp olive oil
3 sprigs of rosemary
2 crushed garlic cloves
Salt
Black pepper

METHOD

1. Pat the steak dry with a paper towel
2. Drizzle olive oil
3. Season with salt prior (So the salt penetrates the steak)
4. Rub in well
5. Leave to rest at room temperature for 30 minutes
6. Crush and peel 2 garlic cloves
7. Cast iron on a high heat
8. Cook the steak for 2 minutes lightly pressing down
9. Flip over and cook for 2 minutes
10. Flip the steak once more, add butter, garlic and rosemary
11. Baste continuously for 2 minutes
12. Leave the steak to rest for 5 minutes
13. Season with salt and black pepper

Internal temperature with a meat thermometer/time in the cast iron

120-125 °F (48-51°C) / 5-6 minutes for rare 
130-135°F (54-57°C) / 6-7 minutes for medium-rare 
135-145°F (57-62°C) / 7-8 minutes for medium 
145-155°F (62-68°C) / 8-9 minutes for medium-well 
155°F+ (68°C+) / 10 minutes+ for well-done

You never season a steak with salt and leave for thirty minutes. You season just before putting in the hot oil.
