Here’s a rule of thumb that should work for most. For Prime or American Wagyu it’s ok to cook at a more higher internal temp (like Medium) so you can render the fat but don’t go over Medium. With select or sometimes Choice, cook them Medium Rare and no higher.

I heard of someone that apparently cook for 10 seconds on one side, flip it and cook it for another 10 seconds and then just eat it.
