Makes 5 SERVINGS

Ingredients:
10 pieces Bacon Cook to preferred doneness
10 Eggs
10 OZ Low-Fat Cottage Cheese (2%)
½ tsp Salt
½ tsp Black Pepper
½ Cup Chopped Scallions
1 Medium Bell Pepper Diced
2 OZ Shredded Mozzarella Cheese
5 Tortillas of choice

[Optional]
Your favorite Salsa
Sour Cream or Greek Yogurt
Avocados or Guacamole would be great, too

Instructions:
Bake or fry bacon to your liking and drain excess fat. (I bake mine in the oven for 30-35 minutes at 400F until very crispy.) If bacon is not your thing, you can omit this and make it vegetarian or use other kinds of protein such as Canadian bacon, ham, smoked turkey, shredded chicken etc.

Combine Eggs, Cottage Cheese, salt, and pepper in a blender and process until smooth. Pour into a parchment lined baking tray (or Silicone cups) and sprinkle scallions, bell peppers, and mozzarella cheese on top. Bake in the oven for 35-40 minutes at 400F. Make a burrito by filling each tortilla with ⅕ of the baked eggs and 2 strips of crumbled bacon.
