Not vegan but this indeed is a good breakfast. I am planning on adding vegan and vegetarian meals more often. My healtb is not good at all amd I have a lot of weight to lose. You are am inspiration. ❤ Happy New Year!

I can't stand the texture of oatmeal unless I have the man flu and just need to swallow something for nutrition when I haven't eaten anything for 3 days.

I have the freezer full of blueberries, lingon berries and raspberries I foraged the summer/fall of 2024. I really envy people who can eat oatmeal and not just on the doorstep of death. I like overnight oats with chia seeds, nuts and I probably should invest some money on a big bottle of maple syrup to meet my goals. Happy new year everyone, I hope you find meals that nurture you and doesn't cost much.

With my oatmeal I do whole oats, and blend protien powder (vanilla-pea protien), 1 banana, and 1 apple, with almond milk. Delicious, no added sugars. I norm add chia or flax seeds to it. Chia makes it have a thicker consistency which kinda tastes like cake batter to me.

You described my breakfast exactly. The only thing we do is add a tablespoon or two of peanut butter for some protein and healthy fats. It’s our go-to oatmeal, but we will switch it up time to time.

Nice! Eating oatmeal makes you feel great, and ounce per ounce whole grains cost less than processed cereal.

I cook my steel cut oats in batches and include whatever fruit strikes my fancy. Then I use a bit of coconut oil to spray my muffin tins and freeze the oats in the perfect size for breakfast.. I pop them all out and put them in a giant container in my freezer and every morning I pull out whatever flavour I feel like having. Two minutes in the microwaveand I’m a happy girl.

I eat a bowl of oatmeal every morning. (Not instant) ❤ old fashion oats, water, 1/2 brown sugar, fruit and sunflower seeds when available

I prep 1/2c oats w 1c hot tea kettle water in 2c reusable bowls w lids. (I like the screw on lids for work for soups and oatmeal. If I remember I'll add 1 tsp chia seeds.). I let them bloom like 5-10 min.(Stirring once or twice if I think about it.) I stir in 2T brown sugar and will store in fridge when cooled down. I switch up add ins depending on mood. In a pinch I'll just add some cinnamon or choc chips, maybe 1T of cocoa.
I've added pumpkin or steamed/mashed carrots w some crushed pecans. I add based on what I have and what sounds good.
I usually prep 3 or 4 at a time. It's my variation of overnight oats, but I bloom the oats first. I usually heat the oatmeal a min or two before eating. It heats up quick for at work. And does mess a pan up.
And I find that oatmeal keeps me full longer.

Happy New Year! I like the direction you are going with your channel. I am not vegan, but I consider myself plant based because I only eat a few fish. I only eat meat around 5 times a year because I don't want to be a hard to accommodate guest. That said, even then I will not eat processed foods. It would be great if you did some "basics" style videos. I don't know if anyone has posted plant based "mother sauces" or regional base ingredients like Mire Poix or "Holy Trinity" used for building meals quickly.

I like making oatmeal with frozen mixed berries and ground flaxseed in the instant pot using the pot in pot method. Easier to clean up because the IP's inner liner doesn't get food on it. I don't have to watch the oatmeal to cook properly (unlike stove top) and I can use organic berries at a decent price, no food waste like fresh berries in the fridge sometimes.

We're of the same mind Mark, I've gotten hooked on overnight oats, but with fruit variety, blueberries here in Mexico are expensive (even if they're grown here) but also having two corn tostadas, with refried beans spread on them and garnished on top with vegan meat(chopped, fried banana skins) and topped of with a 240 ml. glass of fresh squeezed oj. Blueberries, as beautiful as your lady Monica's beautiful pair of 'baby blues'. Féliz Año Nuevo Mark and Monica. :D

Overnight oatmeal with soy milk, blueberries is my go to. Being diabetic this has really helped me stay powered

I normally eat oat clusters with some dried fruit like raisins (kinda like muesli but they're baked into little cluster bites and they normally have a bit of a crispy texture), yes oat clusters are a bit more expensive than plain oats but I much prefer the texture.

My first breakfast was oatmeal, blueberries, walnuts, ground flax seed, spices, and a little honey. I cooked the oatmeal in soy milk for the extra protein boost.
