I bet silken tofu would work even better for that mayo because it’s so soft and silky!

roasted garlic would be amazing in the tofu and tahini! an added step, but so worth it

I make hummus every week from a can of chickpeas. I never use oil, only cold water, lemon juice and a little running tahini plus garlic and spices. Very yummy - my grandson prefers this hummus over store bought - just like me.

Hi Chelsea, thank you so much for putting together all this information and support, and free to all of us. I am a 60yr old woman who has struggled with weight issues all my life. I've weighed as much as 110kg and as little as 68kg (that was in 2006). Over the years since 2006 I have gradually crept up to weighing 85kg and freaking out that it's going to get worse. Your youtube videos have been the kick-start I needed to get back to eating more sensibly. In the past three weeks watching your videos, I have begun to eat a lot more veges and fruits, cut out processed foods, and eaten a heap of potatoes and soups and I have dropped down to 82kg this morning. I haven't felt hungry or tired and I feel like my body really likes this way of eating so much more. Most of all I have almost completely cut out oil and vegan spreads. Feeling good, thanks again and hope you keep making your fun and interesting videos.

I love oil free hummus, low sugar bbq sauce, cumin, and lime juice as a dressing! So good!

I'm with you about wanting to taste all the great parts of the actual salad. I often squeeze half an orange onto my giant salad, and add the remainder of the orange flesh to the salad. I love Cara Cara oranges, but any will do. Thank you for sharing your experiences with us. Helps keep me on track.

Chelsea, have you written a book encapsulating all your wonderful teaching?

One thing I’ve been adding to my salad is some smashed pinto beans with lime juice cumin salt pepper and garlic. It adds a lot of creaminess and is so good!

I found that Morinu silken tofu has the mildest flavor and in my opinion, makes the best vegan mayo.

I've never seen the pourable tahini they have in the US in Australia. As an experiment last week I mixed a whole jar of Macro tahini with water in a food processor (the quality is fine, it's just not liquid - all tahini has sesame seed oil in it obviously). I was adding just warm water for nearly 20 minutes! But once it was emulsified and pouring consistency I put it into a plastic squeezy bottle to keep in the fridge. Easy peasy.
My dressing trick is balsamic high in grape must and no added sugar with a dessert spoon of some white miso. It's a small amount like your last dressing Chelsea, and is 1 minute to make, plus super delish.

I made the sesame dressing with rice wine vinegar and low sodium soy sauce. So awesome!

I use oil free hummus (I get the Oasis brand) to make dressing. I add dijon mustard, lime juice, dates, ground flax seeds to thicken it up...that is the base. Often times I leave it at that but you can add spices and change it up.
