That was quite the science experiment of a recipe producing egg spaghetti from duck eggs . Interesting technique.

Spaghetti, my next craving with this recipe. Bigger noodles.

I've never had it before. It looks good and delicious. With shrimps or sardines/mackerel in olive oil and 2-3 slices of tomatoes would be sumptuous, too. 😋

Any way to just cook them in warm water without having to use all the calcium lactate at the end?

If you cannot obtain Sodium Alginate:
SODIUM ALGINATE SUBSTITUTES
Sodium alginate is a natural polymer derived from seaweed, commonly used as a thickening agent and stabilizer in various industries. However, there are several substitutes available that can replace sodium alginate in different applications.
Here are some of the most common substitutes:
Guar Gum, Gum Arabic (Acacia Fibre), Agar Agar, Gelatin, Whey Protein from milk, Carrageenan, Xanthan Gum
I do not know about quantities of each of those products. If you can use any of them you will need to do your own experiments.

I understand that you use measures appropriate to your place of residence and tradition. Will it be a big problem if you give the recipe using grams and milliliters instead of cups and teaspoons. After all, we have different teaspoons and cups but we play and milliliters the same :)

Does this cook the same way as normal fresh noodles? Any offensive taste? I really want to try this
