112g mozzarella
1/4tsp xantham gum
1 large egg yolk.
Warm cheese with xantham
Add yolk mix
Sandwich between paper roll out
Use pizza cutter form strands. Grease cutter

I made up a triple batch and froze it in portions uncooked so when I want pasta I take it out "thaw" then cook. Works for me !

I just tried this recipe and it was AMAZING. Definitely need to set for the 8+ hours for cooking it. I ran out of parchment so I used a quart sized ziplok bag and rolled the pin over it while in the bag which formed a perfect edge as well as noodle thickness for the recipe and just ran the pizza cutter over while still inside the bag which perforated the pasta without cutting through the plastic. Opened the seal to get air inside while it set overnight then cut the bag open and they all released off of the plastic effortlessly! Excellent recipe especially with the xanthan gum addition (I tried both with and without). Thank you so much for sharing this 🌼

I made this and it was the best keto pasta! I was afraid it would melt, but I timed it like you said and rinsed it. It didn’t melt when I added hot stroganoff on top. It had a perfect pasta texture. Love! I rushed the process a bit by putting it in the freezer a while.

For those who have made this does the Xanthen gum make the noodles slimy. I shy away from XG because I find that's what happens.

Thank you! I've been on lazy Keto for about a month and a half just making small changes here and there. I'm finding it easier to ignore foods like pasta, but luckily now with your recipe, I can enjoy Keto pasta without having to spend a lot of money since I have all those ingredients on hand! 👨‍🍳👩‍🍳

I notice you used packaged shredded cheese, which I've been avoiding because freshly shredded melts better, but in this case I see the benefits of using the packaged pre-shredded cheese. Yay!

Joe, you are the man! You have inspired me to start eating ketogenic. Six months ago my A1C was 7.9 I just got my last lab results 2 days ago my A1C is 5.4 and I lost 40 lb in the past 6 months. I am a professionally trained chef but your keto recipes have inspired me. These are so much better than shirataki noodles and they are even better in my opinion than regular noodles I use these to make fettuccine alfredo keeps the carb count even lower thank you so much you have made a huge impact on my life

Oh, good. I has just found a recipe that used a lot of egg whites (egg white bread). Now I have a use for the yolks, too.
