We usually make the bhajis during Ramadan, after breaking fast for the day. There's nothing better than a cold glass of lime infused water and fried food after a long day of no food or drink :)

Just watched this for the first time, and I have a VERY easy option: fried apples and onions. My preference is about half (tart) apples and half onions, both sliced but only the onions peeled. You can peel the apples if you want, but I never have. I fry them in melted butter and enjoy them alone, but often serve them with pork. I got the idea from the "Little House on the Prairie" series of books, she mentioned fried apples and onions in one of them. I was 11 or so when I first tried to cook it, and have not yet had any complaints. I have added different spices or even honey, and had sliced cheese to go with it once or twice. Goes nicely into butterflied pork chops, you can even just put the raw onion and apple into the chops if you are going to bake them (which I have done). I like them a little soft but with bite, but that is just my preference: cook them as long as you like. I haven't yet tried caramelizing them, I never thought of it until now...

As a massive onion-enthusiast I was so happy to see this video! And damn, that onion tart, my mouth started watering. Really tempted to make all of these to be quite honest!

You can replace Crispy Onion Bhajis with shredded pumpkin! IT'S SO AWESOME

I absolutely love onion soup, and like to do something my grandma taught me when I need to get my onion soup fix. Take a onion (vidalia sweet onions are the best for this), slice it into eights, put in a mug (big enough for the onion). Cover with water, add half a beef boullion cube (or more if you want) and microwave for a minute. The onion melts into the water, and it tastes so good. I like to put a slice of swiss and microwave it for about 15 seconds more, to get that cheeziness. Better than having to cook onions for HOURS for the legit stuff.

Yesterday I made some garlic bread with onions. Never tried it before, came out amazing! Just cooked finely copped onions and garlic in some butter, and then mixed it with the rest of the butter and fresh mint. Spread on baguette, tinfoil it, and roasted it on the bbq, or oven.

Really liking this series!!

9 years later :-): a very famous dish from Bern in Switzerland, where I live, is swiss onion and cheese tart. On the last monday of November, there is the "Zibelemärit" (onion market) in Bern, and eating some swiss onion and cheese tart then is like a tradition for locals (and for the many visitors coming to the market).

One quick tip .. mix those freshly cut onions in some dry ground flour before adding them in the batter .. that'll absorb all the moisture from the onions and make them even more crispy and awesome !! :D

I love cooking the onions down until they become brown (always stirring so they won't burn) and put it on top of rice. Great recipes!

My absolute favorite onion recipe of all time is French onion soup. I roast the sweet onions in an enamel-lined cast iron dutch oven with salt and pepper at low temperature for hours with a fresh bay leaf, until they're a deep reddish brown color, add thyme, a bit of garlic, and some wonderful beef stock. Swiss cheese and oven fired sourdough croutons for a topper, SORTED.

at home (middle eastern cuisine) we make something called Keshna كشنة it uses the same amount of sliced onions in a pan with just a little oil, cook it without covering it or adding anything else until the onions go really soft and brown (about 10 to 20 minutes on high heat). add half a cup of raisins, maybe a handful of cashews and pine nuts if you want, and then salt the mixture to taste. it's better if it's a little too salty than bland. also a tablespoon of mixed spices (as long as it has a lot of turmeric or you can add more of that separately, the color is important) after adding the spices the pan will get really gritty so you can add some more oil or a splash of water to deglaze it, once it's all mixed up you're done!
serve it on top of hot white rice with some grilled chicken and you've got yourself a warming meal ^^
it keeps well in the fridge and next time you make rice, you can add a tablespoon of the mixture to the cooked rice while it steams to warm it through.
