*Note* depending on your husk powder, the noodles can look a bit purple/gray after cooking. Different brands of husk powder experience it differently. They are still perfectly fine to eat and taste the same. I've noticed that cooking it in butter instead of boiling cuts down the color changing affect slightly if it bothers you.

Just made this tonight and it lived up to my expectations! If you were to measure against the dry pasta at the store as a 10, this would be an 8.5 to a 9 against that pasta. If comparing against whole wheat pasta, this pasta blows the whole wheat pasta out of the water. Great job and thank you for bringing pasta back into my keto life.

I made this recipe this evening and my husband and I loved it. It was not exactly like regular pasta but it was a very close second. I would recommend this to anyone who is hungry for a pasta dish. We had it with low carb spaghetti sauce and meatballs and a salad. it was great! Thanks for the recipe!

We cut this wide and used it for lasagne noodles without boiling. The sauce did a super job of cooking it and we are so so so glad for this recipe! Thank you

I made this pasta tonight and it blew me away! My son sample a bit and he said it take like real pasta! I am so happy it doesn’t taste eggy. It’s a little slimy but the spaghetti sauce and Parmesan cheese helped. I can use this recipe for all my pasta cravings and Asian stir fry! Thank you! This time around doing Keto this will help me stay committed and no cheat days!

I've recently made this. It came out very nice!

Things I did slightly different.

Dry ingredients - I sifted thoroughly and blended together. No lumps to work out.
I used a large cello pad instead of my counter. Much easier to lift crumbly bits.
Rolling herb cutter works wonderfully for thin pasta. :)

I just made this and they were great!  It worked better on the fettuccini setting on my elderly pasta maker than the spaghetti setting.  All it needed was a little cheese ...they were even good plain!

good recipe thanks. Reminds me of my mom (but without the beard lol) she used to make her own egg noodles. And then she'd hang them up all over the kitchen table to let them dry. I guess the drying time is what gives them that "bite" you referred to. Super appreciate all these low-carb gluten-free bread recipes. Twenty five years ago I heard about the benefits of low carb but at that time, the only option was just to eliminate all forms of bread, which of course was pretty much impossible!

Great recipe, thank you! I made some changes mixing everything in a bowl and used only egg whites. I doubled the recipe as well. Got an amazing batch of noodles out of it. They won't stick together if you use cooking spray on them. Thanks again :)

Just starting keto but I still need to buy product slowly. I have almond flour and the husk so I will get other I gredients to make noodles. I loved pasta. Thank you.

I love the idea of having this on hand as a dry mix premade, and all you have to do is add egg, knead, and so on. Maybe even having a way to store the cut noodles over time (drying them, perhaps? Vacuum sealed?) so they're ready to go in minutes.
