I have been meal prepping mine and my wife’s breakfasts and lunches for 6 days a week for a couple years now and I honestly can’t imagine eating healthy without it. It’s my Sunday morning routine. In 2 hours I make 24 meals. The time and money saved is invaluable.

This was so easy and quick to do. Love it.
I just changed the egg for soft tofu and chicken for chickpeas, and got a vegan version. Easy, quick... and delicious.

I need to do this. It will cut down on the stress I experience, of wanting to have meals, ready to go, for the next day, but because I am so intensely busy, with work, I find I come home really late, or finish work at home too late, and I feel exhausted, and the last thing I want is to start cooking for the next day. Food prep is quick, easy, and makes life more organized, and overall, much healthier, by using good quality, healthy food/meal choices!! This is a really exciting way of living. I can see massive benefits for myself. Thanks Matt!!

A recipe I've been using for my meal prep every day for a few months now and not sick of yet.
A take on a Vietnamese slaw which probably isn't very Viet at all.

1/4 Red cabbage - Shredded
2-3 carrots - Sliced into thin thumb length sticks
1 Broccoli bunch - Trees diced into quarters
1 Shallots (Spring Onion) bunch - Sliced thinly
1 Cilantro (Coriander) bunch - Diced finely stems included
1/2 Basil bunch - Diced finely leaves only (alternatively a basil paste will do)
3 Garlic cloves - Diced finely
2-3 Tbsp Olive Oil
1-2 Tbsp Lime Juice
Salt and Pepper to taste (I prefer slightly more pepper with this recipe)

Optional:
1 Long Red Chilli - Diced finely with seeds included
1/2 Red onion - Sliced or diced
1 Red Bell Pepper (Capsicum) - Sliced into thin thumb length sticks

Mix all ingredients then add 1.3lbs-2.2lbs (600g-1kg) Chicken of your choice.
I usually use some store bought pre marinated chicken thighs or chicken breast schnitzel.

I'm on intermittent fasting so eating two of these per day which equates to around $7.50 AUD (~$4.80USD) per day.
