A while back Doobydobap made a video while she stayed with her boyfriend in Denmark. There she made Kimchi from local ingredients, since the “authentic“ ingredients were hard to get.

One thing she mentioned stuck with me. She talked about how there are many different kinds of kimchi. Made from radish, cucumber, melon… and that cabbage just happens to be really popular. That all of them have somewhat different ingredients and every family has their own recipe. She ended it by saying, that we should view the word “kimchi“ rather as a technique of fermenting vegetables instead of a certain finished product. And that you can make it from different veggies.

I liked that. So I guess the “real“ kimchi is the one everyone makes to their own liking.

It's the way you wrap the cabbage up into a neat compact little bundle before placing it into a jar that makes it even more appealing. Kimchi is delicious. I've had the vegan and non-vegan and both are delicious.

I'm not Korean, nor Asian, I just read some yt comment a while ago. They said they were Korean and shellfish / oyster in kimchi is in Korea popular only in coastal regions and in the rest of the country the kimchi without seafood is the norm. It sounds logical, I believe it. I also remember reading each family has its own recipe anyway and I believe it, too, since there are national dishes of my country and the details / seasonings / proportions vary from family to family, too. It seems pretty normal.

You make the perfect kimchi the best way. I mean traditionally i follow your recipe. Crunchy kimchi 8 weeks later is still so good in kimchi fried rice and some ramen. Worth it !!

I'm deathly allergic to shellfish, and I've never had kimchi with it! From restaurants, in jars, from korean friends, etc. Idk who would even say that. Most Koreans I know don't put shrimp paste or fish sauce.

As a half Korean, Ive never heard people say that. I really want to try vegan kimchi though. I think I will like it better because i don’t like shrimp paste. Yum😋

I am going to try vegan kimchi for the first time today, it does rlly annoy me when people say stuff without even knowing the history or facts! But omg it looks so pretty all bundled up✨

I've got lists of the food you prepare that once I've sold my house and found somewhere new, I'm going to try each recipe, starting with ttekbokki and try and honour your mum's traditional way of making it too x

I’m allergic to shrimp so I eat vegan kimchi or I take Benadryl so I don’t get sick. As long as it taste good to you, who gives a flying squirrel fuck. People shouldn’t complain about it not being original when they’re probably not even Korean!

I always believed that with traditional kimchi each family had its own unique recipe. When I first spoke to one of my Korean friend's mom's about kimchi having fish sauce in it the look she gave me you would have thought I murdered her first born! They were not a veg family at all.

I don't know why but just reading the title made me want to duck my head down immediately. Maybe its years of these .... is not real arguments has made me prep myself for the verbal tongue lashing someone is about to unleash and Joanne is no exception to this but she will defiantly defend her argument with as much poise and grace as she can muster. Until she's pushed too far and the native Chicagoan/Korean auntie energy she has comes flying at you. Love her videos and love the journey she allows us to see her and her family on.
