One tip: if you want to remove the sourness from the old kimchi to make jjigae, add sugar while you stir-fry it in the pot.

You remind me of my dad(I’m adopted, he’s very white). He works at the shipyard and has since I’ve been alive so like 23 years at least, but he’s worked with a bunch of old Korean guys his whole career and they introduced him to Korean food and he fell in love with kimchi. He’d take me to the Asian markets and I’d come home to find him making kimchi. I’m only a quarter Korean and I grew up in a white/ Alaskan native household so it was such a good feeling for him to genuinely love the food and culture and be the one to show it to me.

I think that if you’re regularly making kimchi, a kimchi fridge might be a good investment. It’ll help your kimchi last longer if you don’t enjoy the extremely sour taste.

Some hot tips:
-Use water from washing rice as your "broth". Adds an extra depth of flavor. Personally I wash it around 2-3 times and while the water is still cloudy but has most of the residue washed out I scoop out 4-6 cups, and make dashi stock with it using seaweed, dried shiitake and dried anchovies
-If using pork, render out the fat in a cold pan, then once enough fat is there add some onions in there to sweat it.
-More relevant if you're using whole chunks of pork belly or shoulder but ~half spoonish of 된장/soybean paste can help combat the gaminess/"funk" that pork might have.
