Just saying, a famous chemist here in Italy, Dario Bressanini, made a video explaining the science behind limoncello. He said that you can just leave the zests to infuse for just 3 days, because most, if not all, will infuse within the first days

You can also use the leaves to aromatize a soup or curry by adding it in the end for just the sweet smell of it.

When I make my limoncello I juice the lemons and freez them. When it's time to make the simple syrup, I Would add the lemon juice in with the water and sugar.
