What could you do with leftover vegetable scraps at the end of the week? Make stock cubes! You can use any sort of leftover vegetables to make your own all natural stock cubes! The process is super straightforward and you can make enough to store and use for months.

Ingredients 🥦🥕🍠🟨

* 1kg Assorted leftover vegetables (carrot peels, celery, broccoli stems , cauliflower leaves, soft veg , onion, leeks, mushrooms, etc.)
* 4 x cloves of garlic
* 1 teaspoon of salt
* 1 teaspoon of nutritional yeast
* Herbs & spices
* Salt & pepper
* Olive oil
Instructions 🥣
* Gather your leftover vegetables and make sure they are clean and edible.
* Chop the vegetables into smaller pieces
* Sauté them with 2 tbsp of olive oil until
* They release all the flavours and most of the water has evaporated
* Let the veg cool for a bit
* In a blender add the cooked vegetables, garlic, spices and herbs salt & black pepper.
* Blend the mixture until it becomes a smooth puree.
* Line a flat, shallow pan with parchment paper. Pour the vegetable puree onto the pan and smooth it out evenly.
* Place the pan in the freezer and let it freeze until it's solid.
* Remove the frozen vegetable puree from the pan and cut it into cubes.
* (Optional )Wrap each cube in parchment paper or place them in an airtight container. Store the wrapped cubes in the freezer .

Now you have your homemade vegan vegetable stock cubes in a convenient frozen form to enhance the flavor of your recipes whenever needed. Just take out a cube or two from the freezer for your cooking!

Here's a tip from a Food Sciences student: You can add a pinch of baking soda when cooking the veggies to speed up the caramelization and Mallard reaction - the reaction that breaks down sugars and creates yummy flavor. But be mindful about the amount of baking soda added. It REALLY speeds up the breaking down process of veggies, so you might get a really jammy, disintegrated, super sweet tasting veggie jam when doing so. I did this with onions and the result was so sweet, I thought it's possible to use it for desserts 💀

Oh my goodness! You are really a genius!! I’m always at the store looking for vegan stock cubes!! I’ve made my own veggie stock, it didn’t taste very good, maybe that’s why I never considered making my own cubes! Many thanks, Amazing!!

I really love your efforts.
I'm from India ..
I come from a small remote village, our tribe also does the same for 75+ yrs.. we have our own various recipes like this, we call them Labra mixture or Labra sabji, which basically means a fried mix of just anything but it is primarily veges..
During colonialism we had to offer most of our earnings, lentils, rice and vegetables as taxes to the British govt hence we got nothing for our own survival..
As a result we had to move to this type of cooking we peeled off the unwanted parts of vegetables and cooked them independently or with left over rice as khichdi which also means mixture of vegetables, lentils and rice..
Since our tribe is essentially Hindu and we belong from Vaishnav sect we prohibits from fish and any other animal items, so to survive the days we adopted this type of cooking .
Masala chai has the same story behind it's development..

I have a veggie bag in my freezer and all my veggie scraps goes in there till I have enough to make a batch of stock. But this method would give me more room in the freezer and allow me to add a bit of yum to other dishes without adding a lot of liquid.

I make stock powder instead - similar process but dehydrate and grind everything up. Saves room in the freezer ❤️
