On the Go Vegan Breakfast Ideas!

Breakfast is and will always be my favorite meal. Here are 4 easy, healthy and tasty vegan recipes - perfect for busy mornings. We’ve got yummy carrot cakes, a giant veggie sandwich, plus on the go müsli & smoothie bowls.

INGREDIENTS:
#1 Mini Vegan Carrot Cakes
2 cups spelt flour (240g)
2 tsp baking powder
¼ tsp cinnamon
¼ tsp salt
½ tsp vanilla
¼ cup melted vegan butter or coconut oil + 1 tbsp more for greasing the muffin tin (60ml + 1 tbsp)
½ cup raw sugar + 2 tbsp (125g)
2 tsp apple cider vinegar OR 1 tbsp lemon juice
¾ cup non dairy milk (180ml)
⅓ cup unsweetened applesauce (80ml)
1 cup shredded carrots (110g)
¼ cup raisins, optional (25g)
→ makes 12 muffins
#2 Peanut Butter Hummus Veggie Sandwich
1 tbsp hummus
1 tsp natural peanut butter, salted
2 pieces of bread
½ avocado
carrot strips
cucumber
tomato
red onion rings
a handful of greens
* serves 1
#3 Apple Cinnamon and Date Müsli Mix
1 ½ cup oats, rolled (135g)
1 cup oats, small cut (90g)
3 tbsp hulled hemp seeds
¼ cup walnuts (30g)
3 tbsp sunflower seeds
1 cup apple chips (60g)
→ or add soft apple rings if you can find them :)
dates, chopped ~ ½ cup (100g) for the entire müsli mix, a handful for 1 serving*
1 cup basic cereal or granola (110g)
this makes about 4 servings
*I added the dates separately in the video, but you can add all of them to the big batch, as long as their not super soft.
#4 On the Go Matcha and Cinnamon Smoothie Bowl
1-2 bananas, frozen
1-2 pears
1 cup grapes, frozen
a dash of cinnamon
1 tsp matcha powder
1 handful of spinach, optional
3/4 cup non dairy milk, more if needed (180ml)
