From my year spent working at a burrito bar: If you do the marination of the red onions with the lime juice for about 15 minutes before adding it to your guac it turns the guac a really bright almost mint green colour (we used to make up to 20kg of it fresh every morning). Also if you heat the tortilla first and roll it before it cools down then it makes it more stretchy so you can tightly fit in more filling 😊

This was lovely, but I can’t imagine ever having the time to make this for breakfast. I made it for lunch on consecutive days (because there were so many leftover ingredients) and absolutely loved it. Thank you for putting this recipe out there.

We made these for dinner last night and they were AMAZING! The queso sauce is the best plant based queso sauce recipe I have tried. I could eat it by the spoonful! My husband is considering switching to PB lifestyle and this really helped win him over.

I made this today for my multi-generational family of 6 vegans (not counting baby grandson yet)! Your recipe, queso sauce, tofu, and potatoes are truly stellar - everyone loved it!
