I love Aldi. It has been such a life saver for our family. ! Fyi those bags of the little tri colored sweet peppers you can use the seeds and grow your own red orange and yellow peppers.

That broccoli stem can be blanched and frozen. $everal together will make broccoli soup. Make it easy br placing the stem on top of the ingredients in your crock pot and after a couple hrs remove, cool and bag up for freezer. Keep adding stems till you have enough. I then only need 1/2 a fresh or frozen broccoli for a hearty soup. I cook rice separately and add to bowl before serving. I also dolop sour cream on top but it's not necessary.

You could also make veggie broth in the crockpot with leftover onion skins and the insides of peppers to save on those bullion cubes💕💕

I made the Moroccan soup, delicious! And the tortilla soup, AMAZING! I will be trying the others, but I wanted to share my thoughts on the ones I tried so far. Tortilla soup will definitely be on my regular rotation. So easy and yummy.

I cook for 1 however it is still necessary to budget and do the best I can with my resources. Last week I cooked 1 pound of Hamburger The next day I took a can of Mushroom soup, around 1.5 cups of Instant Mashed Potato, 1 16 a ounce bag of Mixed Vegetables, and 9 ounces of fresh Mushrooms. All of these items were used to make 2 meals only the mushroom soup was not used in the second meal. I even used a little of the Mashed Potato to thicken the second meal.
First meal Cottage Pie 5 portions. Second meal Hamburger Vegetable Soup 4 portions. This is 9 portions or servings using a pound of meat. With the Soup of course I will have Crackers or a slice of bread to bulk it up. And with the Cottage Pie I added a side of cooked Turnip. I season my food well and that I think helps with eating leftovers.
This method is saving resources, time, money, energy, and of course fuel costs.

Have you considered using dried beans instead of canned? They need to be soaked overnight before cooking but you can save some money that way.

A Hint: You can also eat the stems of broccoli. Pick a bunch(es) of broccoli with thinner main stem(s). (Some are quite overgrown). Cut off the woody end part and dice the remaining stem. Quite tasty. Works great in stir fry also. Likewise, the leaves of beets are edible and tasty.

You are feeding a family on a budget. Creative meals are what our anchestors made with simple ingredients. You have mastered the art of cooking. You don't need bullion cubes. Vegetables and spices slow cooked in their own broth with just water or coconut milk is enough. You can use lime/lemon juice to finish. We used Tamarind juice too for sweet and sour flavor.
