I am one of those WFPB eaters that sticks to lower calorie veggies and fruit and rarely eats legumes or wholegrains. I love legumes but I have been worrying about putting on weight. However I have been eating more beans and lentils in the past 7-10 days and I have not put on weight so far, they also help to keep me regular as I tend to suffer from constipation. I am going to carry on eating beans and lentils because I absolutely adore them and they are delicious in salads (straight from the can, with a little salt and balsamic vinegar for dressing, no oil) and in veggie soups, I love kidney beans. PS Chickpeas are the main ingredient of falafel, and who doesn't love a falafel + hummus salad?
I make mushrooms and lentils (or beans) stews with a tomato, onion, garlic and basil sauce
My favourite soup is grilled aubergine and red lentils in a tomato, onion, garlic and basil sauce

3. Quinoa
4. Tofu
5. Black beans

Happy to say that with the exception of tofu, I love all of the above! Are canned chickpeas good?

I'm hypothyroid....alot of docs I follow say no to soy/tofu. What's your take on that?
