I used raw honey to ferment garlic for 6 weeks to create a honey lemon garlic pizza bread.
Peel the garlic and put in a jar. Cut up a few pieces here and there to let the juices out to react with the honey. Let it sit at room temp in a dark place for 6 weeks. Check it each day and open the lid to release fermentation gas build up. It will smell like garlic a lot. The smell mellows over time. After time has passed its good to use in any dish. Cook it or don't. Either way is good to eat. I cooked it on some pizza style bread with lemon and thyme and parmesan cheese. So good.
