Fermented garlic in local raw honey, step it up ……add cinnamon stick, piece of ginger, fresh thyme and the taste is amazing. After a while the honey becomes like candy. 😍 oh I forgot cayenne powder 🤭.

I think the problem is you have to be careful you are getting All Honey. I have heard some people water it down with corn syrup. No idea how we can tell, though. And just cause it is local, can it be trusted.
Since sugar can be a preservative it should be good for a long time. If not trusted honey, I would think no more than 6 months.
Make sure no water on the garlic or in jar.
Use clean tools, not fingers to get garlic/honey out of jar.

Lool i just made some. I used unpasturized honey, any raw honey I found wasnt in liquid form. I was told this is okay, is this correct?

@mamalindacooks ill do u 1 better. I think you can use filtered or pasteurized honey and itll work fine. Seems like the garlic should have the yeast and moisture to make it work regardless of the type of honey. Ill let u know if i dont get botulism. If you dont hear from me...

...then i probably just forgot to follow up.

Moisture, Ph balance or temp can “cook” food to be safe.

Botulism cant grow in sugar. Its only really an issue with canned meats and some canned veggies.
