Should really make disclaimers on your fermentation videos, because anyone can try this for themselves and without being notified of the possibility/danger of botulism, there’s legitimate risk someone who doesn’t know what they’re doing will get seriously sick.

I've had mine for about 2 years and trust me
Just keep adding different kinds of honey and garlic
It develops an insane flavor over time and each batch can be completely different and age way differently on a lot of factors
My current batch is
Regular store honey, eucalyptus honey, truffle infused honey, Manuka honey, and lavender
The garlic ranges from young garlic, to dehydrated, black garlic, and roasted garlic

Garlic confit then add the honey, throw in a spoonful of apple cider vinegar.Put it in a mason jar and into the freezer for six weeks. Been doing this for years. Never had a jar explode or crack or have anyone die or get sick.

I have a jar of that using our own backyard honey - THEN I grow hot peppers to make my own hot sauce and add THAT garlic honey to the hot sauce as a secret ingredient! AWESOME!!!

Ive been making this for about 8 years now, I blend the old garlic into the pizza sauce and use the honey on wings and fish, then just add more fresh garlic and honey to keep the jar full, Ive had a half gallon jar going about 3 years now.

Be sure to chop up the garlic and let it sit for a few minutes. When garlic is chopped or crushed, allinase enzyme is activated and produce allicin from alliin (present in intact garlic). Watch out for the botulism as other people have commented.

Fear the garlic. I made air fried garlic in olive oil in a jar, and it tasted good. Thrown it 3 days later out of fear from botulism

I used sugar syrup instead, it's slightly slimy in texture, but it didn't make me sick and it doesn't taste off. It's pretty nice actually, sweet yet very garlicky. I used it to soups and cooking
