I am a microbiologist, specialisation on industrial and food microbiology. During my early college days it was taught that Indian foods are not good especially the traditional ones, but during my PhD I realised traditional Indian foods are actually just not foods they are superfoods.
Like millet, moongdal, homemade pickles, A2 ghee, moringa, buttermilk, sattu and the list continues.
When someone says bad about Indian foods tell them that indian foods are not naan/ parota with chicken butter masala.

I have pickles only once in a week with Paratha. I take one spoonful.
That's my limit. Usually I have curd alongside to reduce the spice. 😂

As a Kashmiri, it is a must dish for us in winters for around 4 months...
We include a small portion of pickles in every meal

I’m grateful to you. I was aware of what not to eat but not I have become more conscious about my food. It does end up me being hungry or crave for fried but it’s okay. Better to have healthy gut & poop than being sick.

I make different types of pickles at home. The quint essential மாவடு/ வடுமாங்காய், ஆவக்காய், மாங்காய் தொக்கு, நெல்லிக்காய், கிடாரங்காய். I use all these pickles in rotation, one type of homemade pickle each day !!

We don't use vinegar in pickle, we let it ferment naturally under warm environment

Traditionally in our country we are using neither vineger not brine sir.But my grandma makes( uppu nimmakai ) pickle only with salt and lemon

American pickles are nice as they are crunchy and mild.
However none beats our mangoginger ( maainji).

Pickle has good ingredients. Espy Fenugreek(methi), fennel, coriander, apple vinegar, olive oil etc. since today it’s kept in the fridge, less salt is added. Can also make Cranberry, kumquat, lemon pickles too.

Sir vinegar doesnt allow ferementation as far as I know and also sir I want everybody to know that sauerkraut and fermented onions have incredible nutrient content, both for gut and generally! It would be helpful to many as it was for me I am vegan and after two years of my search for fermented food I stumbled upon them and they have helped immensely!

Dr.Sir- I strongly recommend you to have tie up with local restaurants and have Pal Recommendations in their Menu or Pal Certified, so it will be easy for us to make decisions when ordering. Please Please do this. May be start with India restaurants and expand later.
