Bottom line, and this is almost lost in this video: eating button mushrooms does not appear to present any cancer risk. This is important to me since I eat a lot of raw mushrooms.

Paul Stamets has always said to always cook mushrooms. Not the least reason for this is the rotting conditions mushrooms thrive in, including even manure.

well werent mushrooms like overall pretty cancer protective... (other than that one compound)? which means u may increase ur overall cancer risk by X(due to that compound) but may decrease it 5(or so)X cuz of the other beneficial compounds in them

The comic Dr. Greger is a bad choice, I think.
It reduces the believability massively. Having an actual doctor on screen telling you the information was always what made nutritionfacts stand out

Could it be, that the benign substances in mushrooms drop at the same rate? I am not sure, if it really is a good idea to try to reduce the amount of agaritine as much as possible. For example when I cook mushrooms, the cooking water has a very intense brown color. I keep thinking, that there will probably be a lot of vitamins and other healthy substances in the cooking water as well.

I know someone who had that shiitake reaction, it's wild.
I was told by the person who taught me how to grow mushrooms that we should cook mushrooms mostly to break down the chitin for better absorption of nutrients.

What about canned or frozen mushrooms? And mushroom broth cubes? Is there data on those?
