Potatoes, rice, pasta, oats, beans, fruit, veg. Same.
Not boring. So many ways to make these.

Awesome, my diet has gone a similarly boring route. Baked potatoes, steamed frozen veg, hummus, fruit, oats.

Cooked vegetables can be boring before you add sauces & spices....but after you add them they are great.

I'm about a decade behind you on the vegan front, nearly 20 years! And I also find my meals getting more and more "boring" but yet they're so satisfying! I don't need fancy!
Love that you shared how even as a long term vegan your blood pressure was going up, good reminder for us not to get slack with our diet

you are looking great jeff. 68? Good shape. Most men at 68 can not sprint due to stuffed knees. I am looking fwd to following your calisthenics journey.

Mix it up a little by adding a Chinese vegetable inspired dish, with tofu, bitter melon, snake beans, pineapple - and cloves/garlic/Chinese five-spice etc.

l am boring also lol. every morning l have oats and fruit and date paste.
lunch is always a salad with rice beans veggies carrot lettuce silver beet and a sliced apple or orange and l make a dressing with tomato sauce vinegar lemon juice and water . dinner l mix up a bit stir fry stew or soup.
l also weigh myself each morning for data to see if l need to eat more or less. l am not on any meds . l am 67yrs and l exercise daily at home with dumbbells and l do pull ups and push ups. thanks for the video. it's good to see how healthy people eat.
the thing is l never get bored with eating the same thing each day.

The sauces you use seem very high in sugars, albeit natural sugars. Do you feel like you’re spiking at all after adding the sauces?
