For people who eat dark chocolate - Dr. Will Clower taught me years ago how to eat it properly - especially the higher percentages like 85-90%. Don’t chew it! Let the dark chocolate sit in your mouth. Suck on it and make it last as long as you can. You’ll taste the chocolate and the butter and the sweetness so much more and truly enjoy the “decadence”. Make sure it’s a quality chocolate too!

This might not be for everyone but when I want a little something sweet, I whip up a small amount of whip cream with a hand held frother. Then add some coco powder and a very small pinch of stevia. I’m not a fan of stevia but I can’t taste it using a small amount, as well the coco powder must hide that taste. It’s like a mini chocolate mousse.

1 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1/4 cup MCT oil
- 1/4 cup unsalted butter, melted
- 1/2 cup granulated erythritol or monk fruit sweetener
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- Optional: 1/2 cup sugar-free chocolate chips or nuts for added texture

Chocolate brownies made with MCT oil
175ml MCT oil
200g Dark chocolate (70% coco)
3 eggs
200g dark brown sugar
100g coconut sugar
2 tsp vanilla extract
125g plain flour

Methed
Preheat the oven 170C Fan

Melt the chocolate in the MCT oil either in the microwave or in a saucepan over a medium heat.

Mix the sugars, egg and vanilla extract together then whisk until think and creamy.

Add the melted chocolate and oil mixture to the whisked eggs and oil when fully combined stir in the flour.

Pour the mixture into a lined baking tray 20cm by 30cm. Bake for 20- 25 minutes until the top starts to crack.

Leave to cool then cut into squares.

Cheesecake cupcakes. (Regular size) crust: 1 cup almond flour, 2T monk fruit 3T soft butter…mix and press into bottom of cup cake liners.
I favor using silicone for these. Filling. 16 oz.cream cheese, 1/2 cup monk fruit, 1/2 cup sour cream, 1.5 t. Vanilla, 2 large eggs.
Bake crust at 325 for five minutes. Add filling and bake 15-20 minutes. The centers should still look a bit jiggly. Use lower rack on oven, one notch above the bottom. I freeze these and pull out a single portion which defrosts quickly.

Heavy whipping (whipped) cream, pecans, cinnamon or nutmeg, with berries!
Dutch Gouda with granny smith apple slices (plus home-made sauerkraut ;^).
Sauted radicchio in olive oil and (low sugar) balsamic with grated parmesan.
Add some fiber to dark chcolate with nuts (pecans, walnuts, macadamias, ...)

Mindy, you can make a delicious nut crust for your cheesecake by toasting pecans and almonds, then processing them (after cooled), then mixing in melted butter and a bit of sweetener. Very similar texture to a graham cracker crust. Thanks for the video, you reminded me I have blueberries in the freezer. You missed one of my favorite good carbs though - spaghetti squash! It's also a good "plate" or base for additions.

I am going to add more sweet potatoes to my diet bcz I do like them & Im 58 so as you said that would be healthier for me &I can’t wait to look up a recipe for MCT oil brownies & Crustless cheese cake!! Yum!! I’ve been doing so great fasting. I have lost almost 30 pounds the last few months & I only have like 10 to go for my target weight !! I tell you I put on weight after 2020 lockdowns like many of us & I tried keto tried exercise & nothing seemed to work for me I would lose maybe 5 pounds but then I’d put it right back on. Fasting is the first thing that honestly worked for me. I look great. Even my husband said I look like myself again. Which from him is a huge compliment!!!

Carolyn Ketchum book "Keto Baking" is AMAZING! Three years ago I got it from my public library and I loved it so much I bought it. I am not a baker but this book is a God sent, I have learned and acquired many ingredients to make the recipes. I am so happy with it that I bake almos every weekend. I actually made a marble cheesecake last weekend and it is delicious! Carolyn also have a YouTube channel called "all day I dream about food" or so and a website with the same name.
The cheesecake and other similar recipes that require a crust, are made with almond flour! I highly recommend her keto baking book! If you see Carolyn in her YouTube videos, you can also see how tone she is!

I discovered Dr. Mindy at the beginning of July, and have now lost 18 pounds following her guidance in fast like a girl. I am at the end of menopause and have suffered horrendous hot flashes (10-15 a day) for past 5 years. I have been taking 2 different supplements in that time which was good at controlling them (2-3 a day) but after 1.5 weeks of fasting I know longer have hot flashes and no longer take the supplements

Last month I fasted around my cycle and varied my fast and exercises. My period was back to normal after 3 months of irregularities. I continued to lose weight and even better results, from size 14-10 now UK size. I’m 45 years old and I initially thought I was peri menopausal. A big thanks to Dr Mindy ❤❤❤

I needed to hear this so bad. After years of intermittent fasting and keto I get so restrictive with myself, that I feel it's counterproductive. I know I need to allow myself to have some good carbs to help balance not just my diet, but my mentality.

Thank you Dr. Mindy! This is why I love your philosophy so much, the flexibility of the foods you eat and most important the flexibility of my metabolism. I've lost 20 (stubborn post menopausal) lbs in 8 weeks, in and out of all different lengths of fasts, some days I feasted, I have more energy than I can ever remember. I have the luxury of listening to my body to follow it more than any schedule. My sugar cravings are gone and even my love of cheese is waning and that's weird to me. Anyhow I love you Dr. Mindy and I'm so grateful for your teaching.
