Healthy No-Bake Protein Cereal Bars (vegan, gluten-free, & refined sugar-free.)

These healthy no-bake protein cereal bars are so scrumptious. They are vegan-friendly, gluten-free, refined sugar-free, made with better-for-you ingredients, & make for the perfect grab & go snack! Who’s grabbing one?

INGREDIENTS:

⏺ 1 cup @maranathanutbutters organic crunchy peanut butter (only 2 ingredients.)
⏺ 4 Tbsp @nutiva coconut oil (melted.)
⏺ 1/2 cup @wholefoods organic maple syrup.
⏺ 4 cups @eatlovebird grain-free cereal.
⏺ 2 scoops @truvani vanilla protein powder.

Chocolate Layer:
⏺ 1 1/4 cup @hukitchen no added sugar chocolate chips (use code Carolina for 15% off, link in bio.)
⏺ 2 tsp peanut butter.

Let’s make 👩‍🍳:

1️⃣ Line a small baking pan with parchment paper. Set aside.
2️⃣ Add peanut butter, coconut oil, & maple syrup to a large mixing bowl. Mix until well combined.
3️⃣ Next add cereal and protein powder. Stir until well combined and the cereal is completely coated.
4️⃣ Pour cereal mixture into the prepared baking pan and use a spoon/spatula to flatten the top, ensuring it’s even. Transfer the bars to the freezer.
5️⃣ Melt the chocolate and the peanut butter in a double boiler or microwave. Pour chocolate on top of the bars.
6️⃣ Transfer bars to the freezer for 20 minutes or until the chocolate hardens.
7️⃣ Cut into bars and enjoy.
8️⃣ Store any leftover bars in the refrigerator.
